Beef Fried Rice

Ingredients:
– 2 cups cooked white rice, preferably day-old
– 1/2 pound beef sirloin, thinly sliced
– 2 tablespoons soy sauce
– 1 tablespoon oyster sauce
– 1 tablespoon hoisin sauce
– 2 tablespoons vegetable oil, divided
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 cup frozen peas and carrots, thawed
– 2 eggs, lightly beaten
– 2 green onions, sliced
– Salt and pepper to taste

Directions:
1. In a medium bowl, marinate the beef with soy sauce, oyster sauce, and hoisin sauce. Set aside.
2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry until browned and cooked through, about 3-4 minutes. Remove from the skillet and set aside.
3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the onion and garlic, and sauté until fragrant and the onion is translucent, about 2 minutes.
4. Add the peas and carrots to the skillet and cook for another 2 minutes.
5. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
6. Add the cooked rice and beef back into the skillet. Stir-fry everything together for another 2-3 minutes until well combined and heated through.
7. Sprinkle with green onions and season with salt and pepper to taste. Serve immediately.
