Beef Burritos Recipe
Ingredients:
For the Beef Filling:
1 lb (450 g) ground beef
1 onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 packet (1 oz) taco seasoning mix
1/2 cup water
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
Salt and pepper, to taste
For the Burritos:
6 large flour tortillas
2 cups shredded cheddar or Mexican blend cheese
1 cup salsa
1 cup sour cream
1 cup guacamole
1 cup shredded lettuce
1 cup diced tomatoes
Fresh cilantro, chopped (for garnish)
Instructions:
Prepare Beef Filling:
In a large skillet over medium-high heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat.
Add the chopped onion, minced garlic, and chopped red bell pepper to the skillet. Cook for another 5 minutes until the vegetables are softened.
Stir in the taco seasoning mix and water. Bring to a simmer and cook for 2-3 minutes until the sauce has thickened.
Add the black beans and corn kernels to the skillet. Stir to combine and heat through. Season with salt and pepper to taste. Remove from heat.
Assemble Burritos:
Lay a flour tortilla on a flat surface. Spoon a generous amount of the beef filling onto the center of the tortilla.
Sprinkle with shredded cheese, then top with a spoonful of salsa, sour cream, guacamole, shredded lettuce, and diced tomatoes.
Wrap Burritos:
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.
Optional – Warm Burritos:
If desired, heat a large skillet over medium heat. Place the wrapped burritos seam-side down in the skillet and cook for 2-3 minutes on each side until golden brown and crispy.
Serve:
Serve the beef burritos warm, garnished with fresh cilantro. Enjoy with extra salsa, sour cream, and guacamole on the side.
