Beef Burritos Are Bursting with Flavor
Ingredients:
1 lb ground beef
1 tablespoon vegetable oil
1 small onion, finely chopped
2 cloves garlic, minced
1 packet taco seasoning mix (or homemade mix)
1/2 cup water
1 cup cooked rice
1 can (15 oz) black beans, drained and rinsed
1 cup salsa
1 cup shredded cheddar or Monterey Jack cheese
8 large flour tortillas
Optional toppings: sour cream, chopped fresh cilantro, diced tomatoes, sliced jalapeños, guacamole
Instructions:
Cook the Ground Beef:
Heat vegetable oil in a large skillet over medium-high heat. Add the chopped onion and minced garlic, and sauté until the onion is softened, about 3-4 minutes.
Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink, about 7-8 minutes. Drain any excess fat.
Season the Beef:
Stir in the taco seasoning mix and water. Bring to a simmer and cook for 2-3 minutes until the mixture thickens.
Combine Fillings:
In a large bowl, combine the cooked ground beef, cooked rice, black beans, and salsa. Mix well.
Assemble the Burritos:
Warm the flour tortillas in the microwave for about 20-30 seconds to make them more pliable.
Lay a tortilla flat and spoon about 1/2 cup of the beef mixture into the center. Sprinkle with shredded cheese.
Fold the sides of the tortilla over the filling, then roll up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.
Heat the Burritos:
For a crispier burrito, heat a non-stick skillet over medium heat and place the burrito seam-side down. Cook for 2-3 minutes on each side until golden brown and crispy.
Serve:
Serve the beef burritos hot with your favorite toppings like sour cream, chopped fresh cilantro, diced tomatoes, sliced jalapeños, and guacamole.
