Bang Bang Shrimp Pasta
Ingredients:
8 oz linguine or spaghetti
1 lb shrimp, peeled and deveined
1/2 cup mayonnaise
1/4 cup sweet chili sauce
1 tbsp sriracha (adjust to taste)
2 tbsp lime juice
2 tbsp olive oil
3 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/4 cup green onions, chopped (for garnish)
Fresh cilantro, chopped (for garnish)
Directions:
Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.
Prepare the Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and lime juice. Set aside.
Cook the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp, salt, and pepper. Cook for 3-4 minutes, or until the shrimp are pink and cooked through.
Combine: Add the cooked pasta to the skillet with the shrimp. Pour the sauce over the pasta and toss to combine, ensuring the pasta and shrimp are well coated.
Serve: Divide the Bang Bang shrimp pasta among plates and garnish with chopped green onions and cilantro. Serve immediately.
