Bang Bang Shrimp Pasta
Ingredients:
8 ounces linguine or spaghetti
1 pound shrimp, peeled and deveined
1 cup buttermilk
1 cup panko breadcrumbs
1/2 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper, to taste
1/4 cup vegetable oil (for frying)
1/2 cup mayonnaise
3 tablespoons sweet chili sauce
1 tablespoon sriracha (adjust for spice preference)
2 green onions, sliced (for garnish)
Fresh cilantro, chopped (for garnish, optional)
Directions:
Cook the Pasta:
In a large pot of boiling salted water, cook the linguine according to package instructions. Drain and set aside.
Prepare the Shrimp:
In a bowl, combine the buttermilk, garlic powder, paprika, salt, and pepper. Add the shrimp and let them marinate for about 15 minutes.
Bread the Shrimp:
In a shallow dish, place the flour. In another dish, place the panko breadcrumbs. Dredge each shrimp in flour, then dip into the buttermilk mixture, and finally coat with panko breadcrumbs.
Fry the Shrimp:
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded shrimp in batches, cooking for 2-3 minutes on each side until golden and crispy. Remove and drain on paper towels.
Make the Bang Bang Sauce:
In a small bowl, mix together the mayonnaise, sweet chili sauce, and sriracha. Adjust the sriracha to taste for desired spiciness.
Combine Pasta and Sauce:
In a large bowl, toss the cooked pasta with the Bang Bang sauce until evenly coated. Gently fold in the crispy shrimp.
Serve:
Divide the pasta into serving bowls and garnish with sliced green onions and fresh cilantro if desired.
