Banana Pudding Stuffed French Toast Recipe
Ingredients:
8 slices of bread (thick-cut, such as brioche or Texas toast)
2 ripe bananas (sliced)
1 cup banana pudding (prepared, store-bought or homemade)
4 large eggs
1 cup milk (or half-and-half for a richer flavor)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon (optional)
Butter (for cooking)
Powdered sugar (for serving)
Whipped cream (for serving, optional)
Additional banana slices (for garnish, optional)
Instructions:
Prepare the filling:
In a mixing bowl, combine the banana pudding with the sliced bananas. Stir gently to mix.
Assemble the stuffed French toast:
Take two slices of bread and spread about 2-3 tablespoons of the banana pudding mixture on one slice. Top with another slice of bread to form a sandwich. Repeat with the remaining bread and filling.
Make the egg mixture:
In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon (if using) until well combined.
Cook the French toast:
Heat a large skillet or griddle over medium heat and add a bit of butter to coat the bottom.
Dip each stuffed sandwich in the egg mixture, making sure both sides are coated. Let the excess egg mixture drip off before placing it in the skillet.
Cook each sandwich for about 3-4 minutes on each side, or until golden brown and cooked through. Add more butter as needed while cooking.
Serve:
Once cooked, remove the stuffed French toast from the skillet and let it cool slightly. Dust with powdered sugar and serve with whipped cream and additional banana slices if desired.
