Banana Pudding Cheesecake

Ingredients:
For the Crust:
2 cups vanilla wafer crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
24 oz (680g) cream cheese, softened
1 cup granulated sugar
3 large eggs
3 ripe bananas, mashed
1/4 cup sour cream
1 teaspoon vanilla extract
1 tablespoon all-purpose flour
For the Banana Pudding Layer:
1 package (3.4 oz) instant banana pudding mix
1 3/4 cups cold milk
For the Topping:
1 1/2 cups whipped cream
10-12 vanilla wafers, for garnish
1 ripe banana, sliced, for garnish

Directions:
Prepare the Crust:
Preheat your oven to 325°F (163°C).
In a medium bowl, combine the vanilla wafer crumbs, sugar, and melted butter. Mix until well combined.
Press the mixture into the bottom of a 9-inch springform pan. Use the bottom of a glass to press it down firmly and evenly.
Bake the crust for 10 minutes, then set aside to cool.
Make the Cheesecake Filling:
In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
Add the eggs one at a time, beating well after each addition.
Mix in the mashed bananas, sour cream, vanilla extract, and flour until fully combined.
Pour the cheesecake filling over the cooled crust, spreading it out evenly.
Bake the Cheesecake:
Bake the cheesecake at 325°F (163°C) for 60-70 minutes, or until the center is set but still slightly jiggly.
Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.
Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight.
Prepare the Banana Pudding Layer:
In a medium bowl, whisk together the banana pudding mix and cold milk until thickened.
Spread the pudding over the cooled cheesecake, covering the top evenly.
Top with Whipped Cream and Garnish:
Spread the whipped cream over the banana pudding layer.
Garnish with vanilla wafers and banana slices just before serving.
Serve and Enjoy:
Carefully remove the cheesecake from the springform pan, slice, and serve chilled.
