Banana Oatmeal Cookies
Ingredients:
2 ripe bananas, mashed
1 1/2 cups rolled oats
1/4 cup peanut butter (or almond butter)
1/4 cup honey or maple syrup
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup chocolate chips or raisins (optional)
1/4 cup chopped nuts (optional)
Instructions:
1. Preheat Oven:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Mix Ingredients:
In a large bowl, mash the ripe bananas until smooth.
Add the peanut butter, honey or maple syrup, and vanilla extract. Mix until well combined.
Stir in the oats, cinnamon, and salt. If desired, fold in chocolate chips, raisins, or chopped nuts.
3. Scoop and Shape Cookies:
Use a tablespoon or cookie scoop to drop dough onto the prepared baking sheet. Flatten the cookies slightly with the back of a spoon, as they won’t spread much during baking.
4. Bake:
Bake for 12-15 minutes, or until the cookies are set and lightly golden on the edges.
5. Cool and Serve:
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
