Baked Potato Chicken and Broccoli Casserole
Ingredients:
2 large baked potatoes, peeled and diced
2 cups cooked chicken, shredded
2 cups broccoli florets, steamed
1 cup shredded cheddar cheese
1 cup sour cream
1/2 cup milk
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/2 cup breadcrumbs (optional for topping)
2 tablespoons butter, melted (optional for topping)
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Prepare the Casserole Mixture:
In a large bowl, combine the diced baked potatoes, shredded chicken, steamed broccoli, 1/2 cup of cheddar cheese, sour cream, milk, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Assemble the Casserole:
Transfer the mixture to a greased 9×13 inch baking dish. Spread it evenly.
Add Cheese and Breadcrumbs:
Sprinkle the remaining 1/2 cup of cheddar cheese over the top. If using breadcrumbs, mix them with the melted butter and sprinkle over the cheese.
Bake:
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the casserole is heated through.
Serve:
Let it cool slightly before serving. Enjoy your hearty and comforting casserole!
