Baked French Toast Muffins

Ingredients:
8 slices of bread (Texas toast, challah, or brioche work great)
3 large eggs
1 cup milk
1/2 cup heavy cream
1/4 cup granulated sugar
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon salt
Optional toppings: powdered sugar, maple syrup, fresh fruit, or whipped cream

Directions:
Prepare the Bread:
Preheat your oven to 350°F (175°C).
Cut the bread into small cubes and place them in a large mixing bowl.
Make the Egg Mixture:
In another bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt until well combined.
Combine:
Pour the egg mixture over the bread cubes, ensuring all pieces are coated. Gently fold the bread until evenly mixed. Let it sit for about 10 minutes to allow the bread to soak up the mixture.
Fill Muffin Tin:
Grease a standard muffin tin with cooking spray or butter. Spoon the soaked bread mixture into each muffin cup, filling them about 3/4 full.
Bake:
Bake in the preheated oven for 20-25 minutes or until the muffins are puffed and golden brown on top. A toothpick inserted in the center should come out clean.
Cool and Serve:
Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack. Serve warm, topped with powdered sugar, maple syrup, fresh fruit, or whipped cream as desired.
