These Baked Blueberry Fritter Bites are mini bites of sweet, tender heaven! Lightly golden, soft on the inside, and bursting with fresh blueberries, they’re perfect for breakfast, brunch, snack time, or a cozy dessert. And best of all—they’re baked, not fried, for a lighter twist on classic fritters.


Ingredients

For the Fritter Batter

  • 1 ½ cups all-purpose flour

  • 2 tsp baking powder

  • ¼ tsp baking soda

  • ½ tsp salt

  • ¼ cup granulated sugar

  • 1 large egg

  • ¾ cup buttermilk (room temperature)

  • 2 tsp vanilla extract

  • 1 cup fresh or frozen blueberries (if frozen, do not thaw)

For the Glaze (Optional)

  • 1 cup powdered sugar

  • 2–3 tbsp milk or lemon juice

  • ½ tsp vanilla extract


Directions

1. Preheat Oven and Prepare Pan

Preheat your oven to 375°F (190°C). Line a mini muffin tin or baking sheet with parchment paper or lightly grease to prevent sticking.


2. Mix Dry Ingredients

In a medium bowl, whisk together flour, baking powder, baking soda, salt, and sugar.


3. Mix Wet Ingredients

In a separate bowl, whisk together egg, buttermilk, and vanilla extract until smooth.


4. Combine Wet and Dry Ingredients

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix—a few lumps are fine. Gently fold in the blueberries.


5. Scoop the Batter

Spoon the batter into the prepared mini muffin tin or drop onto the lined baking sheet using a cookie scoop, filling each cavity about ¾ full.


6. Bake

Bake in the preheated oven for 15–18 minutes (for mini muffins) or 20–25 minutes (for larger bites), until lightly golden and a toothpick inserted in the center comes out clean. Let cool slightly before glazing.


7. Glaze and Serve
