Bacon Cheeseburger Twice-Baked Idaho Potatoes
Ingredients:
4 large Idaho potatoes
1 lb ground beef
1 tablespoon olive oil
1 small onion (diced)
2 cloves garlic (minced)
1/4 cup ketchup
1 tablespoon mustard
1 tablespoon Worcestershire sauce
1/2 cup shredded cheddar cheese (plus extra for topping)
1/2 cup shredded mozzarella cheese
1/2 cup sour cream
4 slices cooked bacon (crumbled)
Salt and pepper to taste
Chopped green onions or chives (for garnish)
Optional toppings: pickles, lettuce, or more bacon
Instructions:
Prepare the potatoes:
Preheat your oven to 400°F (200°C).
Wash and scrub the potatoes. Pierce them a few times with a fork.
Bake the potatoes directly on the oven rack for about 45 minutes to 1 hour, or until tender when pierced with a fork. Let them cool slightly.
Cook the ground beef:
While the potatoes bake, heat olive oil in a skillet over medium heat. Add the diced onion and cook for 2-3 minutes until softened.
Add the ground beef and garlic, breaking it up with a spoon. Cook until browned, about 5–7 minutes. Drain any excess fat.
Stir in ketchup, mustard, Worcestershire sauce, and salt and pepper to taste. Let it simmer for 3–4 minutes. Set aside.
Scoop out the potatoes:
Once the potatoes are cool enough to handle, slice them in half lengthwise. Carefully scoop out the potato flesh, leaving about 1/4-inch of potato on the skin to maintain the shell.
Place the scooped-out potato flesh in a large bowl and mash it with a fork or potato masher.
Make the potato filling:
To the mashed potatoes, add the shredded cheddar and mozzarella cheeses, sour cream, crumbled bacon, and ground beef mixture. Stir until well combined. Season with salt and pepper to taste.
Stuff the potatoes:
Spoon the potato mixture back into the potato skins, dividing the filling evenly among the halves.
Bake the twice-baked potatoes:
Place the stuffed potato halves on a baking sheet. Top with extra shredded cheddar cheese and bake for another 15–20 minutes, or until the cheese is melted and the tops are slightly golden.
Serve:
Garnish with chopped green onions or chives and optional toppings like pickles, lettuce, or more bacon. Serve hot and enjoy!
