Avocado, Mozzarella, and Tomato Grilled Cheese
Ingredients:
2 slices of your favorite bread (sourdough, whole grain, or white)
1 ripe avocado, sliced
1/2 cup fresh mozzarella cheese, sliced (or shredded)
1 medium tomato, sliced
1 tablespoon butter (or olive oil)
Salt and pepper, to taste
Optional: Fresh basil leaves or pesto for added flavor
Instructions:
Prepare the Ingredients:
Slice the avocado, mozzarella, and tomato. Season the tomato slices with a little salt and pepper.
Assemble the Sandwich:
On one slice of bread, layer the avocado slices, followed by the mozzarella, and then the tomato slices. If using, add fresh basil or pesto on top. Top with the second slice of bread.
Butter the Bread:
Spread butter (or brush olive oil) on the outside of both slices of bread to help achieve a golden crust.
Grill the Sandwich:
Heat a skillet over medium heat. Place the sandwich in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. You may need to press down gently with a spatula to help it cook evenly.
Serve:
Once cooked, remove the sandwich from the skillet and let it cool for a minute. Cut in half and serve warm.
