Avocado, Mozzarella, and Tomato Grilled Cheese

Ingredients:
4 slices of bread (your choice, such as sourdough, whole wheat, or ciabatta)
1 ripe avocado
1 cup fresh mozzarella cheese, sliced
1 medium tomato, sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
1/2 teaspoon garlic powder (optional)
1/2 teaspoon dried basil (optional)
Salt and pepper to taste

Directions:
Prepare Avocado:
Slice the avocado in half, remove the pit, and scoop out the flesh. Mash the avocado in a small bowl with a fork. Season with salt and pepper to taste.
Prepare Bread:
Spread butter on one side of each slice of bread. If desired, sprinkle the buttered side with garlic powder and dried basil for added flavor.
Assemble Sandwich:
On the unbuttered side of two slices of bread, spread a layer of mashed avocado. Top with slices of mozzarella cheese and tomato.
Assemble and Cook:
Place the other two slices of bread on top, buttered side up, to form sandwiches.
Heat a skillet or griddle over medium heat and add a small amount of olive oil.
Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Press down gently with a spatula for even grilling.
Serve:
Remove the sandwiches from the skillet and let them cool for a minute before cutting. Serve warm.
