Avocado, Mozzarella, and Tomato Grilled Cheese
Ingredients:
2 slices of your favorite bread (sourdough, whole wheat, or white)
1 ripe avocado
4 oz fresh mozzarella cheese, sliced
1 medium tomato, sliced
2 tablespoons butter
1 tablespoon olive oil
Salt and pepper, to taste
Fresh basil leaves (optional, for garnish)
Directions:
Prepare the Ingredients:
Slice the avocado in half, remove the pit, and scoop out the flesh. Mash the avocado with a fork in a small bowl. Season with a pinch of salt and pepper to taste.
Slice the mozzarella cheese and tomato.
Assemble the Sandwich:
Spread a thin layer of mashed avocado on one side of each slice of bread.
On one slice of bread, layer the mozzarella cheese slices and tomato slices on top of the avocado spread.
Top with the other slice of bread, avocado side down, to form a sandwich.
Cook the Sandwich:
Heat the olive oil in a non-stick skillet over medium heat.
Butter the outside of both slices of bread.
Place the sandwich in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and crispy and the cheese has melted. You may need to press down slightly on the sandwich with a spatula to ensure even grilling.
Serve:
Remove the grilled cheese from the skillet and let it cool for a minute.
Cut the sandwich in half, if desired.
Garnish with fresh basil leaves for an extra burst of flavor.
