Avocado and Tomato Grilled Cheese Sandwich

Avocado and Tomato Grilled Cheese Sandwich

Ingredients:
2 slices of bread (your choice, like sourdough, whole wheat, or ciabatta)
1 ripe avocado, sliced
1 medium tomato, sliced
2 tablespoons mayonnaise or butter (for spreading)
1 cup shredded cheese (such as cheddar, mozzarella, or a blend)
Salt and pepper to taste
Optional: fresh basil leaves or a drizzle of balsamic glaze

Directions:
Prepare the Ingredients:
Slice the avocado and tomato. Season the tomato slices with a pinch of salt and pepper.
Assemble the Sandwich:
Spread a thin layer of mayonnaise or butter on one side of each slice of bread. This will help achieve a golden, crispy exterior.
On the non-buttered side of one slice, layer the shredded cheese. Arrange the avocado slices on top of the cheese, followed by the tomato slices. If desired, add fresh basil leaves for extra flavor.
Cook the Sandwich:
Heat a skillet or griddle over medium heat.
Place the sandwich in the skillet, buttered side down. Cook for about 3-4 minutes, or until the bread is golden brown and the cheese starts to melt.
Flip the sandwich carefully and cook the other side for an additional 2-3 minutes, or until it is golden brown and the cheese is fully melted.
Serve:
Remove the sandwich from the skillet and let it cool for a minute before slicing. This helps the cheese set a little, making it easier to cut.
If desired, drizzle with a bit of balsamic glaze or garnish with additional fresh basil leaves before serving.
