Asian Beef with Snow Peas
Ingredients:
Beef: 1 pound flank steak, thinly sliced against the grain
Snow Peas: 8 oz, trimmed
Soy Sauce: 1/3 cup
Water: 1/3 cup
Brown Sugar: 2 tablespoons
Cornstarch: 1 tablespoon
Vegetable Oil: 2 tablespoons
Garlic: 3 cloves, minced
Ginger: 1 tablespoon, minced
Green Onions: 2, sliced (optional for garnish)
Red Pepper Flakes: a pinch (optional for heat)
Instructions:
Prepare the Sauce: In a small bowl, whisk together the soy sauce, water, brown sugar, and cornstarch until smooth. Set aside.
Cook the Beef: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced beef and stir-fry until browned and cooked through, about 3-4 minutes. Remove the beef from the skillet and set aside.
Stir-fry Vegetables: In the same skillet, add a little more oil if needed, then add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant. Add the snow peas and cook for 2-3 minutes until they are bright green and tender-crisp.
Combine and Simmer: Return the beef to the skillet. Pour the prepared sauce over the beef and snow peas, stirring to coat everything evenly. Cook for an additional 2-3 minutes, allowing the sauce to thicken and the flavors to meld.
Garnish and Serve: Garnish with sliced green onions and a pinch of red pepper flakes if desired. Serve hot over steamed rice or noodles.
