Apple Pie Enchiladas

Ingredients:
2 large apples, peeled, cored, and sliced
1 (10 oz) can of crescent roll dough (or flour tortillas)
1 cup butter
1 cup granulated sugar
1 teaspoon cinnamon
1 teaspoon vanilla extract
½ cup apple juice or water
Whipped cream or vanilla ice cream for serving (optional)

Instructions:
1. Prepare the Apple Filling:
Preheat your oven to 350°F (175°C).
In a small saucepan, melt the butter over medium heat. Add sugar, cinnamon, vanilla extract, and apple juice (or water). Stir and bring to a simmer.
Cook for about 5 minutes until the sauce thickens slightly. Remove from heat.
2. Assemble the Enchiladas:
Unroll the crescent roll dough and separate into individual triangles. If using tortillas, just cut them into 6-8 smaller rounds.
Place apple slices in the center of each dough triangle or tortilla, then roll them up tightly like an enchilada.
3. Bake:
Place the rolled-up apple enchiladas in a greased 9×13-inch baking dish.
Pour the cinnamon-sugar butter sauce evenly over the enchiladas.
Bake for 25-30 minutes until the dough is golden brown and bubbly.
4. Serve:
Let cool for a few minutes before serving. Top with whipped cream or vanilla ice cream for an extra treat!
