Apple Pie Biscuits
Ingredients:
For the Biscuits:
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3/4 cup milk (whole or 2%)
1 large egg
For the Apple Filling:
2 medium apples, peeled, cored, and diced
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1 tablespoon all-purpose flour
1 tablespoon lemon juice
For the Glaze:
1/2 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Directions:
Prepare the Apple Filling:
In a medium bowl, combine the diced apples, granulated sugar, ground cinnamon, flour, and lemon juice. Toss until the apples are evenly coated. Set aside.
Make the Biscuits:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
Cut the cold, cubed butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
In a separate bowl, whisk together the milk and egg. Add this mixture to the flour mixture and stir until just combined. The dough will be slightly sticky.
Assemble the Biscuits:
Turn the dough out onto a floured surface and gently knead it a few times to bring it together. Pat the dough into a rectangle about 1/2 inch thick.
Cut the dough into squares or rectangles. Place a small spoonful of the apple filling in the center of each square. Fold the dough over the filling to form a pocket or a turnover shape. Pinch the edges to seal.
Place the filled biscuits on the prepared baking sheet.
Bake the Biscuits:
Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and the apple filling is bubbly.
Prepare the Glaze:
While the biscuits are baking, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
Glaze and Serve:
Once the biscuits are done baking, allow them to cool slightly on a wire rack. Drizzle the glaze over the warm biscuits.
