Apple Pie Biscuits
Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1/4 cup granulated sugar
1/2 cup unsalted butter, cold and cubed
3/4 cup buttermilk
1 teaspoon vanilla extract
2 large apples, peeled, cored, and diced
1/4 cup brown sugar, packed
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon unsalted butter
1 tablespoon lemon juice
Glaze:
1 cup powdered sugar
2-3 tablespoons milk
1/2 teaspoon vanilla extract
Directions:
Prepare the Apple Filling:
In a medium saucepan, melt 1 tablespoon of butter over medium heat. Add the diced apples, brown sugar, ground cinnamon, ground nutmeg, and lemon juice.
Cook for 5-7 minutes, stirring occasionally, until the apples are tender and the mixture is thickened. Remove from heat and set aside to cool.
Preheat the Oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Make the Biscuit Dough:
In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar.
Cut in the cold cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Add the buttermilk and vanilla extract, and stir until the dough begins to come together. Be careful not to overmix.
Assemble the Biscuits:
Turn the dough out onto a lightly floured surface. Roll it out to about 1/2-inch thickness.
Use a biscuit cutter or round cookie cutter to cut out biscuits from the dough.
Place a spoonful of the apple filling in the center of each biscuit round.
Fold the biscuit dough over the filling, pinching the edges to seal, and place the filled biscuits on the prepared baking sheet.
Bake the Biscuits:
Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and cooked through.
Prepare the Glaze:
While the biscuits are baking, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
Glaze the Biscuits:
Once the biscuits are done baking, remove them from the oven and allow them to cool slightly on the baking sheet.
Drizzle the glaze over the warm biscuits before serving.
