Apple, Pecan & Feta Salad
Ingredients:
4 cups mixed greens (spinach, arugula, or romaine work well)
1 large apple (Honeycrisp or Gala), thinly sliced
1/2 cup pecans (toasted for extra flavor)
1/3 cup crumbled feta cheese
1/4 cup dried cranberries or pomegranate seeds (optional, for a burst of color)
For the Dressing:
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon honey or maple syrup
1/2 teaspoon Dijon mustard
Salt and pepper to taste
Instructions:
1. Prepare the Salad Base:
In a large salad bowl, add the mixed greens as your base.
2. Add the Toppings:
Layer the thinly sliced apples, pecans, crumbled feta, and cranberries or pomegranate seeds (if using) over the greens.
3. Make the Dressing:
In a small bowl, whisk together the olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, and salt and pepper.
4. Toss and Serve:
Drizzle the dressing over the salad just before serving. Gently toss the salad to coat the ingredients evenly with the dressing.
