Apple, Pecan & Feta Salad

Ingredients:
2 large apples (Granny Smith or Honeycrisp), thinly sliced
1/2 cup pecans, toasted
1/4 cup crumbled feta cheese
6 cups mixed salad greens (spinach, arugula, or baby greens)
1/4 cup dried cranberries (optional)
1/2 red onion, thinly sliced
1/4 cup balsamic vinaigrette dressing (store-bought or homemade)
Optional for Homemade Dressing:
2 tbsp balsamic vinegar
1 tbsp Dijon mustard
1 tbsp honey
1/4 cup olive oil
Salt & pepper to taste

Directions:
Prepare the Pecans:
Toast the pecans in a dry skillet over medium heat for about 3-4 minutes, stirring occasionally until fragrant. Set aside to cool.
Prepare the Dressing (If Homemade):
In a small bowl, whisk together the balsamic vinegar, Dijon mustard, honey, olive oil, and a pinch of salt and pepper. Set aside.
Assemble the Salad:
In a large salad bowl, combine the salad greens, sliced apples, red onion, toasted pecans, and dried cranberries (if using).
Add Feta:
Sprinkle the crumbled feta cheese evenly over the salad.
Dress the Salad:
Drizzle the balsamic vinaigrette over the top of the salad. Toss gently to combine all the ingredients.
Serve:
Serve the salad immediately, with extra dressing on the side if needed.
