🍎 Apple Crumble Cheesecake Bars

For the Crust

1 1/2 cups (180 g) graham cracker crumbs

1/4 cup (50 g) granulated sugar

1/2 cup (115 g) unsalted butter, melted
For the Cheesecake Filling

16 oz (450 g) cream cheese, softened

3/4 cup (150 g) granulated sugar

3 large eggs, room temperature

1 tsp vanilla extract
For the Apple Layer

2 large apples, peeled and diced (Granny Smith or Honeycrisp)

2 tbsp granulated sugar

1 tsp ground cinnamon

1/4 tsp nutmeg

1 tbsp lemon juice
-
1 tbsp cornstarch
For the Crumble Topping

1/2 cup all-purpose flour

1/3 cup brown sugar
-
1/2 tsp cinnamon
-
1/4 cup unsalted butter, cold and cubed
👩🍳 Instructions
1️⃣ Make the Crust
Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
Mix graham cracker crumbs and sugar, then stir in melted butter. Press firmly into the pan.
Bake for 8–10 minutes, then set aside.
2️⃣ Prepare the Cheesecake Filling
Beat cream cheese until smooth. Add sugar and mix well.
Add eggs one at a time, mixing gently. Stir in vanilla. Set aside.
3️⃣ Prepare the Apple Layer
In a bowl, toss apples with sugar, cinnamon, nutmeg, lemon juice, and cornstarch until evenly coated.
4️⃣ Make the Crumble
Mix flour, brown sugar, and cinnamon. Cut in cold butter until crumbly.
5️⃣ Assemble

Pour cheesecake filling over the crust

Spoon apples evenly on top

Sprinkle crumble topping over apples
6️⃣ Bake
Bake for 45–50 minutes, until the center is set and the topping is golden.
Cool completely, then refrigerate at least 4 hours (overnight is best).
