Apple Cranberry Coleslaw Recipe
Ingredients:
1/2 head green cabbage, thinly sliced
1/2 head red cabbage, thinly sliced
2 large apples, cored and julienned (use a variety like Granny Smith or Honeycrisp)
1 cup dried cranberries
1/2 cup shredded carrots
1/4 cup finely chopped red onion
1/4 cup chopped fresh parsley
For the Dressing:
3/4 cup mayonnaise
1/4 cup Greek yogurt
2 tablespoons apple cider vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
Salt and pepper, to taste
Instructions:
Prepare Vegetables:
In a large bowl, combine the green cabbage, red cabbage, apples, dried cranberries, shredded carrots, red onion, and parsley.
Make the Dressing:
In a separate small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth and well combined.
Combine and Toss:
Pour the dressing over the cabbage mixture. Toss everything together until the vegetables are evenly coated with the dressing.
Chill:
Cover the bowl and refrigerate the coleslaw for at least 30 minutes before serving to allow the flavors to meld.
