Apple Cranberry Coleslaw

Ingredients:
4 cups green cabbage, thinly sliced
1 cup red cabbage, thinly sliced
1 large carrot, shredded
1 green apple, julienned
1 red apple, julienned
1/2 cup dried cranberries
1/3 cup sliced almonds or chopped pecans (optional)
3 green onions, thinly sliced
Dressing:
1/2 cup mayonnaise
2 tbsp apple cider vinegar
1 tbsp honey
1/2 tsp Dijon mustard
Salt and black pepper to taste

Directions:
Prepare Coleslaw Mix: In a large bowl, combine green cabbage, red cabbage, shredded carrot, green apple, red apple, dried cranberries, and green onions. If using almonds or pecans, add them in as well.
Make Dressing: In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, and Dijon mustard. Season with salt and pepper to taste.
Toss and Coat: Pour the dressing over the coleslaw mixture and toss until everything is evenly coated.
Chill: Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve: Stir the coleslaw before serving, adjusting seasoning if necessary.
