Apple Cranberry Coleslaw
Ingredients:
For the Coleslaw:
1 small head of green cabbage, finely shredded
1 small head of red cabbage, finely shredded
2 large carrots, peeled and grated
1 large apple, cored and julienned
1/2 cup dried cranberries
For the Dressing:
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
1 teaspoon celery seed
1/4 teaspoon salt
1/4 teaspoon black pepper
Directions:
Prepare the Vegetables and Fruit:
In a large bowl, combine the shredded green cabbage, shredded red cabbage, grated carrots, julienned apple, and dried cranberries.
Make the Dressing:
In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, celery seed, salt, and black pepper until well combined.
Toss and Chill:
Pour the dressing over the coleslaw mixture.
Toss everything together until the vegetables and fruit are evenly coated with the dressing.
Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld and the coleslaw to chill.
Serve:
Give the coleslaw a final toss before serving.
Serve chilled as a refreshing side dish or as a topping for sandwiches and burgers.
