Apple Cranberry Coleslaw

Ingredients:
1 small head green cabbage, finely shredded
1 small head red cabbage, finely shredded
2 large apples, cored and thinly sliced
1 cup fresh cranberries, chopped
1/2 cup shredded carrots
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
2 tablespoons honey
1 tablespoon Dijon mustard
Salt and pepper to taste
1/4 cup chopped fresh parsley (optional, for garnish)

Directions:
In a large bowl, combine the shredded green cabbage, red cabbage, apples, cranberries, and shredded carrots.
In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, and Dijon mustard until smooth.
Pour the dressing over the cabbage mixture and toss to coat evenly.
Season with salt and pepper to taste. If desired, garnish with chopped fresh parsley.
Refrigerate for at least 1 hour before serving to allow flavors to meld. Serve chilled.
