Ambrosia Salad
Ingredients:
1 cup sour cream
1 cup whipped topping (Cool Whip)
1/2 cup mini marshmallows
1/2 cup shredded sweetened coconut
1/2 cup chopped walnuts or pecans (optional)
1 can (20 oz) pineapple chunks, drained
1 can (11 oz) mandarin oranges, drained
1 cup maraschino cherries, drained and halved
1 cup seedless grapes, halved
1/2 cup diced fresh or canned peaches (optional)
1/2 cup flaked coconut (optional)
Directions:
Prepare the Dressing:
In a large mixing bowl, combine the sour cream and whipped topping.
Mix until well blended and smooth.
Add the Marshmallows and Coconut:
Gently fold in the mini marshmallows and shredded coconut.
Stir until evenly distributed.
Incorporate the Fruit:
Carefully fold in the drained pineapple chunks, mandarin oranges, maraschino cherries, and grapes.
If using, add the diced peaches and flaked coconut.
Stir gently to avoid breaking up the fruit.
Add Nuts (Optional):
If you like a bit of crunch, fold in the chopped walnuts or pecans.
Chill the Salad:
Cover the bowl with plastic wrap or a lid.
Refrigerate for at least 2 hours, allowing the flavors to meld and the marshmallows to soften.
Serve:
Before serving, give the salad a gentle stir.
Spoon into individual bowls or serve family-style in a large dish.
