🥧 Amandine Tartelettes Recipe (Almond Tartlets)
🧂 Ingredients
For the Tartlet Crust:
1 ½ cups all-purpose flour
½ cup unsalted butter, cold and cubed
¼ cup powdered sugar
1 egg yolk
2 tbsp cold water
For the Almond Filling (Frangipane):
½ cup unsalted butter, softened
½ cup granulated sugar
1 cup almond flour
2 eggs
1 tsp vanilla extract
1 tbsp all-purpose flour
Optional Toppings:
Sliced almonds
Powdered sugar, for dusting
Apricot jam or glaze, for shine

Make the Tartlet Crust:
Combine dry ingredients: In a bowl, whisk together flour and powdered sugar.
Cut in butter: Add cubed butter and rub it into the flour using your fingertips until the mixture resembles coarse crumbs.
Add egg yolk and water: Mix in egg yolk and gradually add cold water until a dough forms.
Chill: Flatten the dough into a disc, wrap in plastic wrap, and chill for 30 minutes.
Prepare the Almond Filling:
Cream butter and sugar: Beat softened butter and sugar until light and fluffy.
Add eggs and flavoring: Beat in eggs one at a time, then add vanilla extract.
Fold in almond flour and regular flour: Mix until smooth and combined.
Assemble and Bake:
Preheat oven: To 350°F (175°C).
Shape tartlets: Roll out the dough and press into tartlet pans (or muffin tins). Trim the edges.
Fill: Spoon almond filling into each crust, smoothing the top.
Top (optional): Add sliced almonds on top.
Bake: For 20–25 minutes, or until golden and the filling is set.
Cool and glaze (optional): Brush warm tartlets with apricot jam for shine. Cool completely before dusting with powdered sugar.
