Air-Fryer Black Bean Chimichangas
Ingredients:
2 cans (15 ounces each) black beans, rinsed and drained
1 package (8.8 ounces) ready-to-serve brown rice
⅔ cup frozen corn, thawed
1 cup shredded cheddar cheese
⅔ cup minced fresh cilantro
⅔ cup chopped green onions
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon salt
½ teaspoon pepper
8 flour tortillas (8 inches)

Instructions:
1. In a large microwave-safe bowl, combine the black beans, brown rice, and corn. Cover and microwave on high for 4–5 minutes, stirring halfway through, until heated through.
2. Stir in the shredded cheddar cheese, cilantro, green onions, cumin, chili powder, salt, and pepper. Mix until well combined.
3. Spoon about ½ cup of the filling down the center of each tortilla. Fold in the sides and roll up tightly into a burrito shape.
4. Preheat the air fryer to 400°F.
5. Lightly spray all sides of each chimichanga with cooking spray and place them seam side down in the air fryer basket in a single layer.
6. Air-fry for 8–10 minutes or until golden and crispy, turning once halfway through cooking.
7. Serve warm with desired toppings such as salsa, sour cream, or guacamole.
