Broccoli Cheese Patties

Ingredients:
2 cups broccoli florets (fresh or frozen, chopped)
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/2 cup breadcrumbs (Panko or regular)
2 large eggs
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon olive oil (for frying)

Directions:
Prepare the Broccoli:
If using fresh broccoli, steam or boil the florets for about 4-5 minutes until tender. If using frozen broccoli, thaw and drain well.
Chop the cooked broccoli finely and set aside.
Mix the Ingredients:
In a large mixing bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper.
Stir until everything is evenly mixed, and the mixture holds together when formed into patties.
Form the Patties:
Take about 2-3 tablespoons of the mixture and shape it into small patties, about 2 inches in diameter. Press them gently to ensure they hold their shape.
Cook the Patties:
Heat olive oil in a large skillet over medium heat. Once hot, place the broccoli cheese patties in the skillet, making sure not to overcrowd the pan.
Cook for about 3-4 minutes on each side, or until the patties are golden brown and crispy.
Serve:
Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.
Serve warm with your favorite dipping sauce, like ranch, garlic aioli, or marinara.
