Taco Pasta Recipe

Ingredients:
1 lb ground beef (or ground turkey, if preferred)
1 packet taco seasoning (or homemade, about 2 tbsp)
1 cup salsa
1 can (10 oz) diced tomatoes with green chilies
1 1/2 cups beef broth (or chicken broth)
8 oz pasta (such as rotini, penne, or shells)
1 cup shredded cheddar cheese
1/2 cup sour cream
Salt and pepper, to taste
Fresh cilantro, for garnish (optional)

Instructions:
1. Brown the Meat:
In a large skillet or deep pan, cook the ground beef over medium heat until browned, breaking it apart with a spatula. Drain excess grease.
2. Add Seasonings:
Stir in the taco seasoning and cook for another minute to coat the beef with spices.
3. Add Liquids and Pasta:
Add the salsa, diced tomatoes with green chilies, beef broth, and pasta. Stir well to combine, ensuring the pasta is mostly submerged in the liquid.
4. Cook:
Bring to a simmer, cover the pan, and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
5. Make it Creamy:
Lower the heat, then stir in the shredded cheddar cheese and sour cream until smooth and creamy. Adjust seasoning with salt and pepper, if needed.
6. Serve:
Garnish with fresh cilantro, if desired, and serve hot. Enjoy with a side of tortilla chips or a dollop of guacamole!
