Chicken Cordon Bleu Meatloaf
Ingredients:
1 lb ground chicken
1/2 lb deli ham, finely chopped or shredded
1 cup shredded Swiss cheese (or Gruyere cheese)
1/2 cup breadcrumbs (preferably Italian-style)
1/4 cup milk
1/4 cup grated Parmesan cheese
1 large egg
2 tablespoons Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried thyme
Salt and pepper, to taste
1/2 cup chicken broth (for basting)
For the sauce:
1/4 cup Dijon mustard
2 tablespoons honey
1 tablespoon mayonnaise
1 tablespoon lemon juice
Instructions:
Prepare the Meatloaf Mixture:
In a large mixing bowl, combine the ground chicken, chopped ham, shredded Swiss cheese, breadcrumbs, milk, Parmesan cheese, egg, Dijon mustard, garlic powder, onion powder, dried thyme, salt, and pepper.
Mix everything together until fully combined. It’s best to use your hands for this step, but you can also use a spoon.
Form the Meatloaf:
Preheat your oven to 375°F (190°C).
Transfer the meat mixture into a greased loaf pan and shape it into a loaf, pressing it down gently to pack it in evenly.
Pour the chicken broth over the top of the meatloaf to help keep it moist while baking.
Bake the Meatloaf:
Place the meatloaf in the preheated oven and bake for about 50-60 minutes, or until the internal temperature reaches 165°F (74°C). You may want to baste the meatloaf with the pan juices halfway through cooking for extra moisture.
Make the Sauce:
While the meatloaf is baking, prepare the sauce by whisking together Dijon mustard, honey, mayonnaise, and lemon juice in a small bowl. Adjust the seasoning to taste.
Serve:
Once the meatloaf is cooked, remove it from the oven and let it rest for about 5 minutes before slicing.
Serve slices of the Chicken Cordon Bleu Meatloaf with a drizzle of the mustard sauce on top or on the side.
