Garlic Grilled Chicken
Ingredients:
4 boneless, skinless chicken breasts
3 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon lemon juice (freshly squeezed)
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon onion powder
1/4 teaspoon red pepper flakes (optional)
Salt and pepper, to taste
Lemon wedges, for serving (optional)
Fresh parsley or basil, for garnish (optional)
Instructions:
Marinate the Chicken:
In a bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, basil, onion powder, red pepper flakes, salt, and pepper until well combined.
Place the chicken breasts in a large resealable plastic bag or shallow dish and pour the marinade over the chicken.
Seal the bag (or cover the dish) and refrigerate for at least 30 minutes, ideally 2-4 hours for maximum flavor.
Preheat the Grill:
Preheat your grill to medium-high heat (about 375°F – 400°F).
Grill the Chicken:
Remove the chicken from the marinade and discard any leftover marinade.
Lightly oil the grill grates or brush the chicken with a little olive oil to prevent sticking.
Place the chicken on the grill and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C).
If you prefer grill marks, avoid moving the chicken around too much while grilling.
Serve:
Once the chicken is fully cooked, remove it from the grill and let it rest for about 5 minutes to retain its juices.
Serve the chicken with lemon wedges for extra zest and garnish with fresh parsley or basil if desired.
