Texas Trash Dip
Ingredients:
1 (8 oz) package cream cheese, softened
1 cup sour cream
1 (10 oz) can Rotel tomatoes (diced tomatoes with green chiles), drained
1 (16 oz) can refried beans
1 (15 oz) can black beans, rinsed and drained
1 packet taco seasoning mix
2 cups shredded Mexican blend cheese (or cheddar cheese), divided
1/4 cup chopped green onions (optional, for garnish)
Fresh cilantro (optional, for garnish)
Tortilla chips (for serving)
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C).
Mix the Dip:
In a large mixing bowl, combine the cream cheese and sour cream. Mix until smooth.
Stir in the Rotel tomatoes, refried beans, black beans, taco seasoning, and 1 cup of shredded cheese. Mix everything well until combined.
Assemble in a Baking Dish:
Spread the mixture evenly into a baking dish (8×8-inch or 9×13-inch works well, depending on how thick you like your dip).
Top with Cheese:
Sprinkle the remaining 1 cup of shredded cheese over the top of the bean mixture.
Bake:
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly on top.
Garnish and Serve:
Remove from the oven and, if desired, sprinkle with chopped green onions and fresh cilantro for added flavor and color.
Serve warm with tortilla chips for dipping.
