Lemon Asparagus Pasta with Grilled Chicken
Ingredients:
For the Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
Salt and pepper, to taste
1 tsp Italian seasoning
For the Pasta:
8 oz fettuccine or pasta of choice
1 bunch asparagus, trimmed and cut into 2-inch pieces
2 tbsp butter
2 garlic cloves, minced
Zest and juice of 1 large lemon
½ cup heavy cream (optional for creamier texture)
½ cup grated Parmesan cheese
Salt and pepper, to taste
Fresh parsley or basil, chopped for garnish
Directions:
Grill Chicken: Preheat grill or stovetop grill pan over medium-high heat. Season chicken breasts with olive oil, salt, pepper, and Italian seasoning. Grill for 5-6 minutes per side until cooked through. Let rest, then slice thinly.
Cook Pasta and Asparagus: In a large pot of salted boiling water, cook pasta according to package directions. Add asparagus during the last 2 minutes of cooking. Drain and set aside.
Prepare Sauce: In a large skillet over medium heat, melt butter. Add garlic and cook for 1 minute until fragrant. Stir in lemon zest, juice, and heavy cream (if using), cooking for 1-2 minutes until warmed through.
Combine: Add pasta, asparagus, and Parmesan to the skillet, tossing to coat with the sauce. Adjust salt and pepper to taste.
Serve: Top with sliced grilled chicken and garnish with fresh parsley or basil. Serve warm.
