Ingredients:
2 slices of thick-cut bread (sourdough, Texas toast, or your favorite sturdy bread)
1 cup smoked brisket, shredded or sliced
2 slices of cheddar cheese (or a combination of cheddar, Swiss, or provolone)
2 tbsp butter (for grilling)
1 tbsp barbecue sauce (optional, for extra flavor)
Pickles or jalapeƱos (optional, for garnish)
1/4 cup caramelized onions (optional)

Instructions:
1. Prepare the Brisket:
If you have leftover smoked brisket, shred or slice it into bite-sized pieces. If not, you can use store-bought smoked brisket (or smoked beef) from a deli or local butcher.
(Optional) Mix the brisket with a little barbecue sauce for an extra smoky, tangy flavor.
2. Assemble the Sandwich:
Butter one side of each slice of bread.
On the unbuttered side of one slice of bread, layer a slice of cheese, followed by a generous amount of smoked brisket, and top with another slice of cheese.
If you like, add some caramelized onions or pickles for added flavor.
Place the other slice of bread on top, buttered side out.
3. Grill the Sandwich:
Heat a skillet or griddle over medium heat.
Place the sandwich in the pan and grill for about 3-4 minutes on each side, pressing down slightly with a spatula.
Flip the sandwich carefully once the first side is golden brown and crispy, and continue grilling until the cheese is melted and the bread is evenly toasted on both sides.
4. Serve:
Once grilled to perfection, remove the sandwich from the skillet and let it sit for a minute before slicing in half.
Serve with chips, fries, or a side of pickles for a savory meal.
