Million Dollar Chicken Alfredo Stuffed Shells

Ingredients:
1 box jumbo pasta shells (about 20-25 shells)
2 cups cooked chicken, shredded
1 cup ricotta cheese
1 cup cottage cheese
1 cup shredded mozzarella cheese
1 cup shredded Parmesan cheese
1 cup shredded cheddar cheese
1 large egg
2 cups Alfredo sauce (store-bought or homemade)
1/4 cup sour cream
1/4 cup chopped fresh parsley (plus more for garnish)
Salt and pepper, to taste

Directions:
Cook the Pasta:
Preheat oven to 350°F (175°C). Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.
Prepare the Filling:
In a large mixing bowl, combine shredded chicken, ricotta cheese, cottage cheese, mozzarella cheese, Parmesan cheese, cheddar cheese, egg, sour cream, and chopped parsley. Season with salt and pepper to taste. Mix well until thoroughly combined.
Fill the Shells:
Pour 1 cup of Alfredo sauce into the bottom of a 9×13-inch baking dish, spreading it evenly. Stuff each shell with the chicken and cheese mixture, then arrange the shells in the baking dish over the Alfredo sauce.
Top with Sauce:
Once all the shells are filled and placed in the baking dish, pour the remaining 1 cup of Alfredo sauce evenly over the top of the shells. Sprinkle with extra mozzarella or Parmesan if desired for a golden, cheesy finish.
Bake:
Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Let the dish cool for a few minutes before garnishing with fresh parsley. Serve hot and enjoy!
