Crispy Cheddar Chicken – Baked

Ingredients:
4 boneless, skinless chicken breasts
1 ½ cups crushed Ritz crackers (or any buttery cracker)
1 ½ cups shredded cheddar cheese
½ cup grated Parmesan cheese
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
½ teaspoon paprika
Salt and pepper, to taste
1/3 cup mayonnaise
1 tablespoon Dijon mustard (optional)

Directions:
Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare Coating: In a shallow dish, mix the crushed Ritz crackers, shredded cheddar cheese, Parmesan cheese, garlic powder, onion powder, thyme, paprika, salt, and pepper.
Prepare Chicken: In a separate shallow dish, combine the mayonnaise and Dijon mustard (if using). Coat each chicken breast in the mayonnaise mixture, then dip it into the cracker-cheese mixture, pressing gently to coat evenly.
Arrange Chicken on Baking Sheet: Place the coated chicken breasts onto the prepared baking sheet.
Bake: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the crust is golden and crispy.
Serve: Let the chicken rest for a few minutes before serving. Garnish with fresh parsley if desired.
