Apple Pie Cinnamon Rolls

Ingredients:
For the Dough:
2 ¼ teaspoons active dry yeast
1 cup warm milk (110°F/45°C)
½ cup granulated sugar
¼ cup unsalted butter, softened
1 teaspoon vanilla extract
2 large eggs
4 cups all-purpose flour
1 teaspoon salt
For the Apple Pie Filling:
2 large apples, peeled, cored, and diced
½ cup brown sugar
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
For the Cinnamon Roll Filling:
1 cup brown sugar, packed
2 tablespoons ground cinnamon
½ cup unsalted butter, softened
For the Cream Cheese Frosting:
4 ounces cream cheese, softened
2 cups powdered sugar
2 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
1-2 tablespoons heavy cream (to adjust consistency)

Directions:
For the Dough:
Activate Yeast: In a small bowl, combine warm milk, sugar, and yeast. Let it sit for about 5 minutes until foamy.
Make Dough: In a large bowl, combine the yeast mixture, butter, vanilla, eggs, flour, and salt. Mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
Let Dough Rise: Place the dough in a greased bowl, cover with a clean towel, and let it rise for 1 hour, or until it doubles in size.
For the Apple Pie Filling:
Cook Apples: In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the diced apples, brown sugar, cinnamon, and nutmeg. Cook for 5-7 minutes, until the apples are tender. Stir in the flour to thicken the mixture. Set aside to cool.
For the Cinnamon Roll Filling:
Make Cinnamon Filling: In a small bowl, mix the brown sugar and cinnamon together. Set aside.
Assemble and Bake:
Roll Out Dough: Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle (about 12×18 inches).
Spread Filling: Spread the softened butter over the dough, then sprinkle the cinnamon-sugar mixture evenly over the buttered surface. Next, add the cooked apple pie filling on top of the cinnamon sugar.
Roll and Cut: Roll the dough tightly into a log. Slice into 12 even rolls and place them in a greased 9×13-inch baking dish.
Let Rise Again: Cover the rolls with a towel and let them rise for another 30 minutes.
Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until golden brown on top.
For the Cream Cheese Frosting:
Make Frosting: While the rolls are baking, beat together cream cheese, powdered sugar, butter, and vanilla extract until smooth and creamy. Add heavy cream to adjust the consistency.
Frost Rolls: Once the rolls are out of the oven and slightly cooled, spread the frosting generously on top.
