Beef and Cheese Chimichangas

Ingredients:
For the Filling:
1 lb ground beef
1 small onion, chopped
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 tsp ground cumin
1 tsp chili powder
½ tsp garlic powder
Salt and pepper to taste
For the Chimichangas:
8 large flour tortillas
2 cups vegetable oil (for frying)
Optional Toppings:
Sour cream
Salsa
Guacamole

Directions:
Prepare Filling: In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain excess fat, then stir in cumin, chili powder, garlic powder, salt, and pepper. Remove from heat and mix in the shredded cheeses.
Assemble Chimichangas: Spoon about ¼ cup of the beef mixture onto each tortilla. Roll up the tortillas tightly, folding in the sides to enclose the filling.
Fry Chimichangas: Heat vegetable oil in a large pan over medium-high heat. Carefully place the chimichangas seam-side down in the hot oil. Fry for 2-3 minutes per side, or until golden brown and crispy. Remove from oil and drain on paper towels.
Serve: Serve hot with sour cream, salsa, or guacamole on the side.
