Cheesy Fiesta Potatoes Recipe
Ingredients:
4 medium-sized russet potatoes, peeled and diced into small cubes
2 tablespoons olive oil
1 packet (1 oz) taco seasoning mix
1 cup shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
1/2 cup sour cream
1/4 cup green onions, chopped (for garnish)
1/4 cup salsa (optional, for serving)
Salt and pepper, to taste
Instructions:
Preheat Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Prepare the Potatoes:
Peel and dice the potatoes into small cubes, about 1/2-inch in size. This will help them cook evenly and get crispy.
Season the Potatoes:
Place the diced potatoes in a large bowl. Drizzle with olive oil and toss to coat.
Sprinkle the taco seasoning mix over the potatoes and toss again until evenly coated. Add salt and pepper to taste.
Bake the Potatoes:
Spread the seasoned potatoes out in a single layer on the prepared baking sheet. Bake for 20-25 minutes, flipping the potatoes halfway through, until they are golden brown and crispy.
Add the Cheese:
Once the potatoes are crispy and cooked through, sprinkle the shredded cheddar cheese over the hot potatoes.
Return the potatoes to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve:
Remove from the oven and top with sour cream and chopped green onions.
Serve with optional salsa on the side for extra flavor.
