Quick & Easy Baked Zucchini Recipe
Ingredients:
2 medium zucchinis, sliced into 1/4-inch thick rounds or half-moons
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried Italian seasoning (or oregano/basil)
Salt and pepper, to taste
1/4 cup grated Parmesan cheese (optional for extra flavor)
1/4 cup breadcrumbs (optional for crunch)
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Zucchini:
Wash and slice the zucchini into 1/4-inch thick rounds or half-moons, depending on your preference.
Season the Zucchini:
In a large bowl, toss the sliced zucchini with olive oil, garlic powder, onion powder, and Italian seasoning. Add salt and pepper to taste, and toss until the zucchini slices are evenly coated.
Arrange on Baking Sheet:
Arrange the seasoned zucchini slices in a single layer on a baking sheet lined with parchment paper or lightly greased.
Optional Topping:
For a crunchy topping, sprinkle Parmesan cheese and breadcrumbs over the zucchini slices. This step is optional, but it adds a nice cheesy crust.
Bake:
Bake the zucchini in the preheated oven for 15-20 minutes or until the zucchini is tender and the edges are slightly crispy. If you used breadcrumbs and Parmesan, they should be golden brown.
Serve:
Remove from the oven and serve immediately as a side dish or light snack.
