Crockpot Cheesesteak Potato Casserole
Ingredients:
1 lb ground beef (or thinly sliced steak)
1 onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
4 cups potatoes, diced (peeled or unpeeled)
2 cups shredded mozzarella or provolone cheese
1 cup beef broth
1 tbsp Worcestershire sauce
1 tsp garlic powder
Salt and pepper, to taste
Fresh parsley, chopped (optional, for garnish)
Directions:
Prepare Meat and Vegetables: In a skillet, brown the ground beef over medium heat, breaking it up as it cooks. Drain any excess fat. Add the diced onion, green bell pepper, and red bell pepper to the skillet, cooking until softened, about 3-4 minutes.
Layer Ingredients in Crockpot: In the crockpot, layer half of the diced potatoes, followed by half of the beef mixture. Sprinkle with a little salt, pepper, and garlic powder. Add half of the cheese. Repeat the layers with the remaining potatoes, beef mixture, seasonings, and cheese.
Add Liquids: Pour the beef broth and Worcestershire sauce evenly over the top.
Cook: Cover and cook on low for 5-6 hours or on high for 3-4 hours, until the potatoes are tender and the flavors are well combined.
Serve: Garnish with fresh parsley, if desired, and serve warm.
