Homemade Fainá (Chickpea Flatbread)
Ingredients:
– 1 cup chickpea flour (also known as garbanzo bean flour)
– 2 cups water
– 3 tablespoons olive oil
– 1 teaspoon salt
– Freshly ground black pepper (to taste)
– Optional: 1 teaspoon dried rosemary or oregano
Instructions:
1. **Prepare the Batter:** In a large bowl, sift the chickpea flour to remove any lumps. Gradually add the water while whisking continuously to form a smooth, lump-free batter.
2. **Season the Batter:** Add the olive oil, salt, and freshly ground black pepper to the batter. If desired, you can also add dried rosemary or oregano for extra flavor. Mix well to combine.
3. **Let the Batter Rest:** Cover the bowl and let the batter rest at room temperature for at least 1 hour. This helps the chickpea flour absorb the water fully, resulting in a better texture.
4. **Preheat the Oven:** Preheat your oven to 450°F (230°C). Place a large, round pizza pan or cast-iron skillet in the oven to heat up.
5. **Bake the Fainá:** Once the oven is hot, carefully remove the pan and pour the batter into it, spreading it evenly. The batter should be thin, about 1/4 inch thick.
6. **Cook Until Golden:** Bake in the preheated oven for about 15-20 minutes, or until the fainá is golden brown on the edges and firm in the center.
7. **Serve:** Remove from the oven and let it cool slightly before cutting into wedges. Serve warm as an appetizer or side dish, traditionally enjoyed with pizza.
