Cold Oreo Cake
Ingredients:
– 2 packs of Oreo cookies (about 300g)
– 1/2 cup (1 stick) unsalted butter, melted
– 16 oz (450g) cream cheese, softened
– 1 cup powdered sugar
– 1 tsp vanilla extract
– 2 cups heavy whipping cream
– 1/2 cup milk
– Additional Oreo cookies for garnish (optional)
Instructions:
1. **Prepare the Crust:** Separate the Oreo cookies and remove the cream filling. Crush the cookies into fine crumbs using a food processor or by placing them in a plastic bag and rolling with a rolling pin. Combine the crumbs with the melted butter until well mixed. Press the mixture into the bottom of a 9-inch (23cm) springform pan to form a crust. Refrigerate while you prepare the filling.
2. **Make the Filling:** In a large bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
3. **Assemble the Cake:** Pour half of the cream cheese mixture over the prepared crust. Dip whole Oreo cookies in milk briefly and arrange them in a single layer over the cream layer. Pour the remaining cream cheese mixture on top and spread evenly.
4. **Chill:** Refrigerate the cake for at least 4 hours or overnight to set.
5. **Garnish and Serve:** Before serving, crush additional Oreo cookies and sprinkle them on top of the cake. Remove the cake from the springform pan, slice, and enjoy!
