Ingredients:
– 4 chicken thighs or drumsticks

– 1 red bell pepper, sliced
– 1 green bell pepper, sliced
– 2 tomatoes, chopped
– 1/2 cup white wine
– 1/2 cup chicken broth
– 1 bay leaf
– 1 tsp paprika
– Salt and pepper to taste
– Olive oil
– Fresh parsley, chopped (for garnish)

Instructions:
1. **Season the Chicken:** Season the chicken thighs or drumsticks with salt, pepper, and paprika. Set aside.
2. **Sauté Vegetables:** In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
3. **Cook Chicken:** Add the seasoned chicken to the skillet and brown on all sides. This should take about 5-7 minutes.
4. **Add Vegetables and Liquids:** Once the chicken is browned, add the sliced red and green bell peppers, chopped tomatoes, white wine, chicken broth, and bay leaf. Stir to combine.

6. **Garnish and Serve:** Remove the bay leaf, sprinkle the dish with fresh chopped parsley, and serve hot with rice, potatoes, or crusty bread.
