Snow Alfajores (Alfajores de Nieve)
Ingredients:
– 200g (7 oz) cornstarch
– 100g (3.5 oz) all-purpose flour
– 100g (3.5 oz) butter, softened
– 100g (3.5 oz) powdered sugar
– 1 egg yolk
– 1 tsp vanilla extract
– 1 tsp baking powder
– 150g (5.3 oz) dulce de leche
– Powdered sugar for dusting
Instructions:
1. **Preheat Oven:** Preheat your oven to 180°C (350°F).
2. **Prepare the Dough:** In a mixing bowl, cream together the butter and powdered sugar until light and fluffy. Add the egg yolk and vanilla extract, and mix until well combined.
3. **Mix Dry Ingredients:** In a separate bowl, sift together the cornstarch, flour, and baking powder. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
4. **Roll Out Dough:** On a lightly floured surface, roll out the dough to a thickness of about 1/4 inch (0.5 cm). Use a round cookie cutter to cut out circles from the dough.
5. **Bake:** Place the dough circles on a baking sheet lined with parchment paper. Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden. Be careful not to overbake, as the cookies should remain soft and pale.
6. **Assemble Alfajores:** Once the cookies have cooled, spread a generous amount of dulce de leche on one cookie and sandwich it with another cookie.
7. **Dust with Sugar:** Dust the assembled alfajores generously with powdered sugar to give them a “snowy” appearance.
8. **Serve:** Enjoy these delicate and sweet alfajores with a cup of tea or coffee.
