Zucchini Tart
Ingredients:
– 2 medium zucchinis, thinly sliced
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 2 eggs
– 200g (7 oz) grated cheese (such as mozzarella or cheddar)
– 200ml (3/4 cup) cream
– 1 pre-made tart crust (or homemade, if preferred)
– Olive oil for sautéing
– Salt and pepper, to taste
– Fresh herbs like basil or parsley (optional)
Instructions:
1. **Preheat the Oven:** Preheat your oven to 180°C (350°F).
2. **Sauté Vegetables:** In a skillet, heat a bit of olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes. Add the sliced zucchini, season with salt and pepper, and cook until tender, about 10 minutes. Remove from heat and let it cool slightly.
3. **Prepare the Filling:** In a bowl, whisk together the eggs and cream. Stir in the grated cheese and the cooled zucchini mixture. Mix until well combined.
4. **Assemble the Tart:** Roll out the tart crust and place it in a tart pan. Pour the zucchini mixture into the crust, spreading it evenly.
5. **Bake:** Place the tart in the preheated oven and bake for about 30-35 minutes, or until the filling is set and the top is golden brown.
6. **Serve:** Let the tart cool slightly before slicing. Garnish with fresh herbs if desired. Serve warm or at room temperature.
