Famous Red Lobster Shrimp Scampi

Famous Red Lobster Shrimp Scampi

Ingredients:
1 pound large shrimp, peeled and deveined
8 tablespoons unsalted butter (1 stick), divided
4 cloves garlic, minced
1/2 cup white wine (or chicken broth)
1 tablespoon lemon juice
1 teaspoon lemon zest
1/4 teaspoon crushed red pepper flakes (optional, for heat)
1/4 cup chopped fresh parsley
Salt and black pepper, to taste
Cooked pasta or rice, for serving
Lemon wedges, for garnish

Directions:
Prepare the Shrimp:
Pat the shrimp dry with paper towels. Season lightly with salt and pepper.
Cook the Shrimp:
In a large skillet, melt 2 tablespoons of butter over medium-high heat.
Add the shrimp in a single layer. Cook for 1-2 minutes on each side, or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
Make the Sauce:
In the same skillet, add the remaining 6 tablespoons of butter.
Once melted, add the minced garlic and cook for about 1 minute until fragrant, being careful not to let it burn.
Add the white wine (or chicken broth) and lemon juice. Bring to a simmer and let it cook for 2-3 minutes to reduce slightly.
Combine and Finish:
Return the cooked shrimp to the skillet and toss them in the sauce. Cook for an additional 2 minutes, allowing the shrimp to absorb the flavors.
Stir in the lemon zest, crushed red pepper flakes (if using), and chopped parsley. Adjust seasoning with salt and pepper to taste.
Serve:
Serve the shrimp scampi over cooked pasta or rice. Garnish with additional chopped parsley and lemon wedges if desired.
